A few weeks ago I tried this Thai Bread Stuffing -> สังขยาใบเตย
As I'm half Thai I ate it before in Thailand and kinda missed it here in Germany... Therefor I tried to make some on my own and now want to share it with you guys :)
It's made with 'Pandan Leaves' (Wiki-Link)
You can get it in your local Asia Shop, just go and ask the staff if you can't find it ;)
Aaah and what can I tell you about this Bread Stuffing... I love it :D and its not even that hard ;)
Unfortunately I can't remember where I got the Recipe from as I found it a while ago... but its somewhere from bloggang.com
So here is the recipe aand of course I took a photograph of the outcome ;)
Ingredients:
You can get the Pandan Juice by blending the leave in a mixer. If it doesn't really work you can add some of the coconut milk just as I did.
Once you have your stuff all there we can start :)
1. Firstly you have to filter the pandan juice until there is just the juice and no more leave pieces.
It's okay if it isn't that accurate.
2. Leave your pandan juice for a while and take your eggs and the sugar.
Beat them together until its frothy.
3. Now put your cooking pot on the stove and fill in your coconut milk. Warm it up a little and add the pandan juice, the flour and the egg-sugar mixture one by one.
It's important that you always keep stiring it at a medium heat level. If you don't keep stiring it, the mixture will blob.
Stir it until it has a creamy consistence.
It's supposed to be green because of the Pandan leaves but if yours isn't green and you'd like it to be just add some green fruit colour.
Nooow believe me or not, that's it :)
You can coat your bread with it or use it as a bread stuffing. I tried both and here is the outcome:
